Today's session is at an exceptional bar in Singapore known as The Swan Song which was one of the iconic bars that was and is part of my whisky journey. My great passion for Clynelish started from Arun when he created an exceptional Clynelish flight for my birthday which i will be forever grateful. On another day I will review the RM 1972 Clynelish that started my passion into this distillery but for today's review, it will be on an old 1980s Clynelish 12 (Bi-colour). Clynelish is known for the amazing waxy white fruit profile that is iconic to the distillery that I have found difficulty in the modern bottling when matured in Sherry Cask. There have been many sherry misses but when it hits for Clynelish it really hits and makes me greatly look forward to today's tasting.
Initial Nose: red fruit, berries, savoury bacon, slightly musky, chrysanthemum
Nosing after time: beef brisket, smoke meats, starfruit, bbq sauce
Palate: beautiful waxiness that goes into a basket of red fruits, pepper, aniseed, starfruit
Finish: Waxy, light spices, menthol sweets, slight light cherries
Man...... Although my favourite profile is still from the bourbon style clynelish this is a magnificent expression of a sherry Clynelish. The 57% really lends to great complexity that even after 30mins the expressions are growing/changing. A meal in a glass.
