Part 2 of 3: The second dram of the night at The Auld Alliance is from the sadly closed distillery Imperial selected by Hideo Yamaoka. Imperial similar to Clynelish tends to give really nice waxy notes with a wider variety of fruits as compared to typical white fruit/pear notes are are found in Clynelish.
Initial Nose: Oily, green mangos, lemon zest, slight minerality, dried herbs
Nosing after time: wonderful oily unripe mangos
Palate: Explosion of fruits and spices, sweet mangoes, starfruit, bay leaf, nutmeg, herbal bitterness, slight pepper
Finish: sweetness holds slightly to the pepper and herbal oily notes that retain on the palate
Wow this reminds of an independent 21 year old glen spey that i had before with beautiful herbs and fruits. Although not extremely fruity, this Imperial has herbal notes that do not overpower but hold really nicely on the palate. Oily/waxiness gives great body to this dram and it is extremely flavourful and enjoyable.
